This was one of my favorite meals on the Whole30.
3 Tbs Olive Oil
1 Large Sweet Onion (peeled and diced)
1 Red Bell Pepper (diced)
1 Orange Bell Pepper (diced)
1.5 pounds of chicken (cooked and shredded)
2 lb. sausage (8 links) (whole30 approved apple sausage from Costco)
2 Large cloves garlic (minced)
1 tsp cumin powder
1 tsp chili powder
4 oz can chopped green chilies
15 oz can chopped tomatoes with liquid
3 lbs sweet potatoes cut into 1 inch pieces.
1 tsp salt
Garnish of Cilantro is optional
Saute the onions, olive oil and peppers. Then add chicken, sausage and garlic.
Then add everything else and simmer on low heat for 20-30 minutes covered.
