Whole30 Sweet Potato Sausage Stew

This was one of my favorite meals on the Whole30.

Ingredients:

3 Tbs Olive Oil
1 Large Sweet Onion (peeled and diced)
1 Red Bell Pepper (diced)
1 Orange Bell Pepper (diced)
1.5 pounds of chicken (cooked and shredded)
2 lb. sausage (8 links) (whole30 approved apple sausage from Costco)
2 Large cloves garlic (minced)
1 tsp cumin powder
1 tsp chili powder
4 oz can chopped green chilies
15 oz can chopped tomatoes with liquid
3 lbs sweet potatoes cut into 1 inch pieces.
1 tsp salt
Garnish of Cilantro is optional

Saute the onions, olive oil and peppers. Then add chicken, sausage and garlic.
Then add everything else and simmer on low heat for 20-30 minutes covered.

Whole30 Ketchup

Tomato Puree-Tomatoes and Salt
Date Puree- Water, Dates, Lemon Juice
Filtered Water
Apple Cider Vinegar
Sea Salt
Lemon Juice
Garlic Powder

Paleo Ketchup

1 can (6 ounces) tomato paste
2 tbsp vinegar or lemon juice
1/4 tsp dry mustard
1/3 cup water
1/4 tsp cinnamon
1/4 tsp salt
1 pinch ground cloves
1 pinch ground allspice
1/8 tsp cayenne pepper(optional)

More Difficult Ketchup

1 lb. fresh plum tomatoes + 1 lb. canned plum tomatoes, or 2 lbs fresh plum tomatoes, chopped
1 large onion, chopped
1/2 fennel bulb, chopped
1 celery stick, cut in cubes
Fresh piece of ginger, about the size of a thumb, chopped
2 cloves garlic, roughly chopped
1/2 red chili, seeded and chopped finely
Large bunch of fresh basil, picked leaves and chopped stalks
1 tbsp coriander seeds
2 cloves garlic
1 tsp freshly ground black pepper
Extra virgin olive oil
3/4 cup + 2 tbsp red wine, balsamic or apple cider vinegar
Sea salt to taste

About 12 minutes over heat
